Any suggestions on how to find companies/persons who can do a van conversion for me in NJ?

There are many Upfitters and some will work on your private van. A shortlist of Conversion Van manufacturers can be found here.
Sprinter vans are often used for conversions. Go to your local Sprinter dealer (or Freightliner) and ask for local references!
Since a lot of the conversion involves working with wood, you may be able to find a friendly craftsman or amateur woodworker at a local woodworking club, who is willing to give you a helping hand.
